Pork Chops with Maple Pumpkin Puree

Executive Chef Lorna, and Krystal, create an absolutely delicious meal of Pork Chops with Maple Pumpkin Puree.

We know the extra stress that comes with having to cook and prepare dinner every night, so these meals are designed to limit some stress in the kitchen whilst helping you to eat great, tasty food! 

So grab your apron, get your ingredients ready, and join us in the kitchen to cook up a delicious storm!

 

Ingredients:

1 large Broccoli 

Olive Oil 

1/4 C Almonds  

4 handfuls Spinach  

 

Pumpkin Puree: 

1 /2 Pumpkin (peeled and Cut into pieces)  

1/2 Onion  

4 Garlic 

1/2 inch Ginger  

2 tsp Smoked Paprika  

1-2 Tbs Maple Syrup  

4 Pork Chops  

 

Recipe: 

For Puree: 

Heat pot gently, add a lug of olive oil, sauté garlic, ginger and onions until soft, add smoked paprika cook out 1 min.

Add pumpkin then just cover with water and a lid.

Let it cook out until soft. Drain, reserving liquid just in case.

Puree with stick blender, season with maple syrup and salt. 

 

Meanwhile, heat a skillet and pot of boiling water

Season pork chops with salt, rub pan with oil and place chops  in the pan

Turn heat down to medium, cook for 5 mins, flip then place in oven @ 200c for 7 mins make sure the skin is touching the edges of the pan.

Take out of the oven and let rest while waiting on pumpkin and water to heat.  

 

Blanch Broccoli in salted boiling water for 2mins

Turn another pan on while broccoli is cooking, add a lug of olive oil to pan,

Toast almonds for 1 min

Add sliced garlic toss for 30secs then add broccoli and  toss in pan for 2 mins

Add spinach then season.  

 

Plate up and enjoy!
